🍛 HUGE VEGGIE-PACKED BIRYANI
🔥 Healthy Vegan Weight Loss Style — Massive Portions & Low-Calorie-Density!
Biryani is one of my absolute FAVOURITE meals because it literally has everything in one dish — loads of veggies, rice, plant-based protein and an insane amount of flavour! 😍
Here’s how I make mine healthy vegan weight loss style while keeping those portions MASSIVE.
Ingredients:
🥦 Cauliflower, finely chopped
🥕 Carrots
🍄 Mushrooms
🫛 1 whole bag frozen peas
🧅 2 small onions
🍚 Rice
🌱 TVP chunks
🥣 Veggie bouillon
🥛 1 whole tub Greek-style soy yoghurt
🧄 Garlic granules
🫚 Ginger
💛 Turmeric
🌿 Coriander powder
🌿 Cumin
🤎 Cinnamon
🌶️ Curry powder
🧂 Salt
🌿 Fresh coriander
Method:
1️⃣ Finely chop your cauliflower and add it to a large bowl with the carrots, mushrooms and frozen peas.
2️⃣ Add turmeric, coriander powder, cumin, cinnamon, curry powder and salt.
3️⃣ Add an entire tub of Greek-style soy yoghurt and mix until all the vegetables are completely coated. Set aside to marinate.
4️⃣ Slice two small onions and water sauté them in a large pan until translucent.
5️⃣ At the same time, cook your rice until around 90% done.
6️⃣ Add TVP chunks and veggie bouillon to a bowl, cover with boiling water and leave for a few minutes to rehydrate.
7️⃣ Add garlic granules and ginger to your onions, followed by all the marinated vegetables and a splash of water.
8️⃣ Add your rehydrated TVP and cover. Let everything cook together for around 10–15 minutes.
9️⃣ Add the partially cooked rice directly over the top of the veggies and let it soak up all that gorgeous flavour.
🔟 Cover again and cook for another 5 minutes.
Finish with fresh coriander and ENJOY! 🌿🍛

Recipe 3: Mediterranean Tofu + Orzo
Makes 4 servings
Per serving: ~430–470 calories | ~32 g protein | ~4–7 g fat | ~9–12 g fiber
Ingredients:
450 g Big Mountain soy-free tofu (or sub 350g seitan, or vegan sausages)
1 cup dry orzo (180 g)
1 cup cooked chickpeas, drained and rinsed (165 g)
2 cups vegetable broth (460 g)
1½ cups cherry tomatoes, halved (225 g)
1 cup artichoke hearts, drained and chopped (170 g)
1 small red onion, chopped (100 g)
3 cloves garlic, minced (9 g)
½ cup sliced Kalamata olives (75 g)
1 tsp dried oregano (1 g)
½ tsp garlic powder (1.5 g)
1 lemon, zest and juice (about 15–30 g juice)
1–2 cups spinach (80–100 g)
Black pepper, to taste
Optional for serving: fresh herbs such as basil & parsley
Directions:
Preheat oven to 400°F (200°C). Cut the tofu into small cubes. Add it to a baking dish with the dry orzo, chickpeas, broth, water, tomatoes, artichokes, red onion, garlic, olives, oregano, garlic powder, salt, and pepper. Stir well. Cover tightly with foil and bake for 25 minutes.
Uncover, add the spinach and lemon zest. Bake uncovered for another 10–15 minutes, until the orzo is tender. If it looks dry before the orzo is cooked, add ¼–½ cup hot water or broth (60–120 g). Squeeze on lemon juice, and let rest for about 5–10 minutes before serving. Garnish with fresh herbs, if desired.
Meal-prep tip: Orzo continues absorbing liquid as it sits, so check it as soon as it’s finished baking. Avoid leaving it sitting uncovered for a long time before portioning.

Vegan Lasagna Soup — No Oven, No Layers, Just One Pot
Vegan Lasagna Soup — No Oven, No Layers, Just One Pot
Vegan lasagna soup made in one pot with fresh tomatoes, tender pasta, lentils and spinach in a creamy dairy-free broth. No oven and no layering—the lasagna sheets cook right in the soup.
Full recipe with tips and substitutions:
Serves 4 | Prep: 10 minutes | Cook: 35 minutes | Total: 45 minutes
INGREDIENTS
• 2 tbsp olive oil
• 4 large ripe tomatoes, about 800 g (1¾ lb), halved and cored
• 1 cup cherry tomatoes (optional)
• 1 medium red onion, finely chopped
• 3 tbsp tomato paste
• 2 tsp Italian seasoning
• 1 tsp garlic powder
• ¼ tsp black pepper
• ¼ tsp chili flakes (optional)
• ½ tsp salt, plus more to taste
• 3 cups low-sodium vegetable stock, plus extra as needed
• 1 cup plain, unsweetened soy cooking cream
• 225 g (8 oz) dried egg-free lasagna sheets, broken into pieces
• 1 can brown or green lentils, drained and rinsed (about 245 g drained)
• 100 g (3½ oz) baby spinach
TO SERVE
Grated vegan parmesan and fresh basil. Optional: vegan cream cheese and a drizzle of olive oil.
METHOD
1. Add olive oil to a wide, deep pot. Arrange the tomato halves cut side down, add optional cherry tomatoes and scatter the onion over them. Heat until gently sizzling, cover and cook over medium-low heat for 12–18 minutes until softened. Add a splash of water if needed.
2. Carefully lift off the loosened skins from the large tomatoes. Add tomato paste and seasonings, mash the tomatoes and cook for 2–3 minutes.
3. Stir in the vegetable stock and soy cream. Bring to a gentle simmer.
4. Gradually add the broken lasagna sheets, stirring to separate them. Cover and simmer until almost tender, about 10 minutes depending on the pasta. Stir every 2–3 minutes and add more stock if needed.
5. Add lentils and spinach. Simmer for another 2–3 minutes until the pasta is tender and spinach has wilted. Adjust the seasoning and stock so the soup stays creamy and spoonable.
6. Finish with vegan parmesan and basil, plus any optional toppings.
TIP: Serve promptly—the pasta keeps absorbing broth. Add extra stock when reheating leftovers.
Save this one-pot lasagna soup for your next cozy dinner and subscribe for more plant-based recipes.
