Here’s another one of my favorite recipes! RAW VEGAN STIR FRY! Savory and delicious! Full recipes are listed below. Enjoy! ????????

RECIPES:

???? STIR FRY (feel free to add whatever you desire) (serves 2)
◇ 1/2-1 cup of green onion
◇ 1/2 of a medium white onion (yellow is a good sub)
◇ 1/2-3/4 red bell pepper
◇ 2.5-3 cups broccoli florets
◇ 3/4-1 cup of baby bella mushrooms
◇ 1 cup of raw sugar snap peas
◇ 1 cup of shredded carrots
◇ 1-1.5 cup shredded purple cabbage
◇ 1-1.5 cup bean sprouts

???? SWEET & SPICY GINGER SAUCE! (Serves 2, makes 8 oz)
◇ 8 tbsp of raw nama shoyu
◇ 4 tbsp raw blue agave nectar
◇ 6 cloves of garlic
◇ 3/4 tbsp of ginger
◇ 2 tbsp of apple cider vinegar

Quick Vegan Meal Prep Recipes (from top to bottom):

1. Easy Thai Noodle Salad (3 servings): Mix 1 ½ cups shelled edamame, 3 ounces vermicelli noodles (soaked according to packet directions, cut into 2-inch-long pieces), ⅓ red cabbage salad recipe, and peanut dressing to taste.
2. Crispy Tofu Salad (3 servings): 14 ounces extra-firm tofu (cubed), tossed in olive oil, one-half spice mix (see below), and 1 ½ teaspoons cornstarch. Roast at 425ºF for 20 minutes. Add cooked grain, one-third red cabbage salad recipe, and peanut dressing to taste.
3. Chickpea Sweet Potato Salad Bowl (3 servings): Toss 1 (15-ounce) can chickpeas (drained and rinsed) and 1 large sweet potato (cubed) in olive oil, and one-half spice mix (see below). Roast at 425ºF for 20 minutes. Mix with ⅓ red cabbage salad recipe, and peanut dressing to taste.
Spice mix (divide into two equal parts for tofu and chickpea bowls): 1 ½ teaspoons smoked paprika, 1 ½ teaspoons garlic powder, 1 teaspoon onion powder, salt, black pepper
Peanut Dressing: 1 cup peanut butter (or tahini or SunButter), ¼ cup tamari, 4 tablespoons maple syrup, 2 tablespoons rice vinegar, 2 teaspoons sriracha, 2 pressed garlic cloves

Nut Free Vegan Cheeze – Melts, Shreds, Slices Like Cheese. #vegancheese

Rosemary Truffle Vegan Cheese (Nut Free)

This recipe is nut-free, dairy-free, soy-free, and delicious. I wanted to make some tasty cheeze to put on some crackers this week, so I whipped up this fire option.

This recipe is inspired by @gnomo_vegano nut-free vegan cheeze. She gets down on the vegan recipes.

I wish everyone a blessed week ahead.

Ingredients:
1 & 1/2 Tbsp tapioca starch
2 Tbsp of water
3/4 cup of creamy oat milk 
1 Tbsp avocado oil
1 Tbsp truffle oil
1 Tbsp of agar-agar 
2 Tbsp of nutritional yeast
1/2 Tbsp lemon juice
1 tsp of dried minced onion
salt to taste
1 tsp dried rosemary

Directions:
Step 1. Mix water and tapioca starch together in a bowl. Place the bowl to the side. 

Step 2. Combine oat milk, avocado oil, truffle oil, agar-agar, nutritional yeast, lemon juice, dried minced onions, and salt in a pan. Mix until dissolved. Cook on medium for 3 minutes. Once the cheese begins to bubble, add the tapioca starch mixture and cook for 1 minute.  

Step 3. Lightly add truffle oil to a small bowl. Add cheeze mixture to bowl and refrigerate for 2 hours. 

Step 4. Roll the cheese in dry rosemary and enjoy!

Meals from the video:
Meal #1 – Frozen broccoli, frozen rice, chickpeas and my healthy vegan mama cheese sauce ( cheese sauce – https://youtu.be/2JE0BNhZ4z4).
Defrost broccoli for 4 minutes. Add everything else when the broccoli is finished and it all melts together 🙂

Potato Curry
2 cloves of garlic
1/2 large onion
3-4 large potatoes
1 tsbp curry powder
1 tsp garam masala
1 tsp turmeric
1 can light coconut milk
1 tbsp tomato paste
5 oz fresh or canned tomatoes
1/2 – 1 C peas
large handfuls of spinach
cook in the instant pot on high pressure for 15 minutes. Manual release
on stove top cook until potatoes are soft

Potato and White Bean chili/soup
1 tsp chili powder
1/2 tsp chili flakes
1/2 cilantro
1 -2 cups corn
2 cloves garlic
1 onion diced
1/2 tsp oregano
3-4 Yukon gold potatoes
1/2 tsp thyme
32 ounces veggies broth
1 tsp smoked paprika
1 tsp cumin
1-2 cans of white beans
Put in the instant pot and cook on high pressure for 15 minutes. Manual release on – stovetop cook until potatoes are soft

Mexican Quinoa:
4 c water
1 can fire roasted tomatoes
1 can black beans
2 c quinoa
1 c onions
1 c corn
2 c bell peppers
8 oz salsa or taco sauce – sometimes I used 1 entire jar of salsa
1 tsp garlic powder
2 tsp chili powder (or more)
Cook on high pressure in Instant Pot – manual release

2 pounds zucchini (about 4 medium)
1½ teaspoons salt
1 egg or ⅓ cup or 50 g chickpea flour + ¼ cup or 60 g of water
1 red onion
2 cloves garlic
1 teaspoon dried oregano
¾ cup all-purpose flour
2 teaspoons baking powder
½ teaspoon black pepper
2 tablespoons extra virgin olive oil or more if needed

SERVE WITH
tzatziki sauce
marinara sauce
cashew sour cream

Metric:
900 g zucchini (about 4 medium)
1½ teaspoons salt
1 egg or ⅓ cup or 50 g chickpea flour + ¼ cup or 60 g of water
1 red onion
2 cloves garlic
1 teaspoon dried oregano
110 grams all-purpose flour
2 teaspoons baking powder
½ teaspoon black pepper
2 tablespoons extra virgin olive oil or more if needed

SERVE WITH
tzatziki sauce
marinara sauce
cashew sour cream

INGREDIENTS + NOTES

#1 DIY Instant Noodle Soup 0:26

for the crispy tofu:

200g (7oz) firm plain tofu
1 tbsp vegetable oil for the pan
1 tbsp cornstarch (or flour)
generous pinch of salt
optional: other spices of choice: turmeric, pepper, paprika, onion powder (a dash of each)

for the soup:

500ml hot water (2 cups), more if needed
1 vegetable stock cube
1 tbsp soy sauce
1 tbsp balsamic vinegar
1 tsp sugar
1-2 cloves garlic, minced
1 spring onion, divided in white and green part
4 small sheets of flavored seaweed (OR 1 regular nori sheet, ripped to bits)
1 tsp sesame oil
optional: dash of chili flakes
1 block of ramen/mie noodles (for 1 serving)
1 handful frozen edamame
1 handful baby spinach
1/2 tsp to 1 tsp miso paste

→ serves 1

#2 Korean BBQ Style Tofu Bowl 2:57

200g (7oz) firm plain tofu
1 tbsp cornstarch (or flour)

for the marinade:
1 tsp gochujang (or more to taste)
1 tbsp sugar
1 tbsp soy sauce
1 tbsp balsamic vinegar
1 tsp sesame oil
pinch of salt
1 tbsp water

2 leeks
250g-300g potatoes, peeled (8.8oz – 10.5oz OR 3 medium potatoes)
1 tbsp olive oil
1 handful cashews
1 dash chili flakes
2 cloves garlic, whole, peeled
1 tbsp balsamic vinegar
1 tbsp sugar
1 vegetable stock cube
625ml (2 ½ cups) water, more if needed
salt, pepper to taste
optional: 1 tsp sesame oil
optional: fresh cilantro, parsley for serving

for the crispy chickpeas:
1 can chickpeas (400g = 14oz)
1 tbsp vegan butter
1 tbsp soy sauce
1 tsp sugar

→ serves 2

#4 Protein Pasta 7:15

1-2 servings pasta of choice (i like half lentil half regular)

for the sauce:
1 – 1 ½ cups premade tomato sauce (225g – 350g)
200g silken tofu (7oz)
1 heaping tbsp hummus or vg cream cheese
optional: 1-2 handfuls vg pizza cheese
optional: 2-3 handfuls baby spinach

→ serves 1-2

#5 Homemade Kimbap 8:35

1 cup (200g) short grain rice, dry
1 ¾ cup (430ml)
generous pinch of salt
1 tsp sesame oil
→ yields enough rice for 3 rolls

HOW TO COOK RICE:

wash the rice and add to pot w water, salt, sesame oil
bring pot up to a quick boil
reduce heat to medium low
once the water has calmed down a bit, put on lid half way
allow to simmer/steam for 15 min
take off the heat
let cool completely, with lid on fully

3 sheets seaweed
fillings of choice:
cucumber, korean radish, carrot, tofu, garlic spinach, vg cream cheese (1 tbsp per kimbap roll) …

serve with soy sauce, chili sauce, etc
