If you’re new to my channel, my name is Leif Arnesen. I’m an engineer-turned-nutrition-nerd and the founder of The Vegan Gym.

In 2014, a rare cancer diagnosis forced me to completely rethink my life. I adopted a whole-food, plant-based diet, and a few months later, after watching Earthlings, I went vegan overnight β€” not just for my health, but for the animals.

At first, I struggled to lose fat and get fit as a vegan. But after diving deep into the science, I built a system that transformed my body and my life. That journey led me to start a blog in 2017, which eventually became The Vegan Gym.

Now, our team is on a mission to help 1,000,000 vegans get into the best shape of their lives because we believe that the more healthy, fit vegans there are in the world, the faster veganism will spread.

Let’s work together to inspire change, spread compassion, and thrive on plants! πŸ’ͺ🌱

Still Vegan? Watch This. Then Decide.

Still Vegan? Watch This. Then Decide.

Is a plant-based diet actually optimal for human health or is that a marketing claim dressed up as science?

In this video, I break down the biochemistry of vegan and vegetarian diets with zero sugarcoating. We cover the real history of the plant-based movement (it starts with religious anti-masturbation crusades in the 1800s), the Expensive Tissue Hypothesis and how meat built the human brain, the difference between PDCAAS and DIAAS protein scoring, anti-nutrients like phytates, oxalates, and lectins, the BCMO1 genetic mutation affecting 45% of the population, the EPIC-Oxford fracture data, and what a strict vegan diet does to your hormones, bones, and cognition.

This is not an anti-vegan hit piece. This is a clear-eyed look at what the science actually says and a practical guide to what you must supplement if you’re eating plant-based.

WNC-based DarΓ« Vegan Cheese Goes From Local Farmers Markets To National Shelves

WNC-based DarΓ« Vegan Cheese Goes From Local Farmers Markets To National Shelves

We’re marking America’s 250th anniversary this year. Here in western North Carolina, we have a lot of reasons to celebrate, right in our backyard.

DarΓ« Vegan Cheese launched in 2019 at farmers’ markets across Asheville and is now sold nationwide.

Inside DarΓ«’s manufacturing facility in Weaverville, there’s culinary magic, but also science. That’s because the magician behind all this unapologetically cheesy vegan goodness really is a scientist. Gwendolyn Hageman graduated from UNC Asheville with a biology degree and a passion for food.

“I grew up eating a block of cheddar and Ritz is what I say, the standard early 90’s diet,” she said.

Hageman had a lightbulb moment while spending time with family.

“My sister was vegan, and she would bring home vegan cheese, and I was like, these are bad,” she added.

She was waiting tables at a local restaurant when the idea came to her.

“Man, I think I want to start a vegan cheese company. It knew it was something Asheville needed,” she said.

Hageman’s middle name is Dare, which ended up playing a big part in her soon-to-be company when she was sitting in a local dive bar with a friend.

“We were sitting in Desoto, he wrote down on a napkin ‘Dare’. That was the first thing he wrote down. He was like, ‘It’s pronounced DarΓ«.’ And I was like, ‘Okay. That’s it.'”

At first, Hageman did everything. She loaded the van, made the cheese, wrapped it, and delivered it. Today, DarΓ« has 12 employees, more than a dozen vegan cheeses and a production facility in Weaverville.

“I’m humbled enough to say when I went to the Whole Foods for the first time and bought my product off the shelf, I sat in my car and cried. I was just over the moon that this idea, from napkin to shelf, and Whole Foods. [It] was unreal.”

So, what makes DarΓ«’s process better than other vegan competitors? Hageman answers easily: “They think about it not scientifically, my brain works that way. So, I feel like I can’t call something cheese unless microbes are involved, and so that makes us vastly different.”

Today, you can find DarΓ« Vegan Cheese all over the country, including California and Hawaii.

This Doctor Went Vegan In 1991 β€” And Proved It Reverses Disease; Dr Ted Barnett

This Doctor Went Vegan In 1991 β€” And Proved It Reverses Disease; Dr Ted Barnett

What happens when a medical doctor goes vegan in 1991 β€” before it was popular β€” and actually tracks the results for decades?

Dr. Ted Barnett is a lifestyle medicine physician who made the switch more than 30 years ago, raised his children vegan, published data, and watched biomarkers change in ways most people were told were β€œimpossible.”

In this conversation, Dr. Barnett explains:
β€’ Why he went vegan in 1991
β€’ What medical school got wrong about heart disease
β€’ How cholesterol can drop dramatically in weeks
β€’ Why food can reverse disease β€” not just manage it
β€’ What 30+ years of real-world data actually shows

This is not ideology. It’s lived experience, peer-reviewed evidence, and outcomes measured over decades.

Whether you’re skeptical, curious, or already plant-based, this interview challenges some of the most common assumptions about diet, disease, and modern medicine.

Watch with an open mind. Decide for yourself.
