Walnut Chili (Frito Pie)

I have always been a big chili fan. Now that it’s starting to get cold in San Diego, it’s time to whip up some chili. Even before I was vegan, I could get down making chili. I would make chili for my son and his friends, and they loved it. They loved it so much that they wouldn’t save me any. Lol Once I went vegan, I started to search for meat replacements, and about three years ago, I fell in love with walnut crumbles as the perfect replacement. Give it a try.

I added Trader Joe’s corn chips, vegan cheese, cashew ranch, and chives to this recipe. Straight Fire!!

Pesto pasta salad:
I often wing this pasta salad based on what veggies I have on hand! Here are my best tips for making it 🙂
– Use a store bought pesto and mix with water to thin it out, add the water slowly so that it doesn’t become too watery
– Add a source of protein, I love crispy tofu or chickpeas!
– Add a variety of veggies, try aiming for 2-3 + some greens!
