🌯 VIRAL VEGAN DONER KEBAB (High-Protein Seitan!)
In this episode of Natalie Re-Creates, I’m taking the internet’s viral doner kebab, originally popularized by @MezeMike on TikTok and recreating the method step-by-step, but with a 100% vegan, high-protein twist using seitan.
This plant-based doner delivers the same juicy texture, thin slices, and bold Middle Eastern flavors, with ~30g of protein per serving… no meat required 🌱💪

🌯 Viral Vegan Doner Kebab (High-Protein Seitan)
Natalie’s recreation
Yield: 6 servings
Macros for just the Doner Seitan Meat:
Protein: 30-32g per serving
Carbs: 8g
Fat: 1g
🛒 Ingredients
Wet (blend into a smooth paste):
• ½ medium onion
• 2 garlic cloves
• 2 tbsp olive oil
• ¾–1 cup water (add gradually)
Dry:
• 240g (2 cups) vital wheat gluten
• 2 tbsp nutritional yeast
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp dried parsley
• ¼ tsp cumin
• ¼ tsp marjoram
• 1 tsp cinnamon
• ¼ tsp coriander
• 1 tsp salt
• Optional: annatto or beetroot powder for color
🥣 How to Make It:
1️⃣ Make the dough
Mix all dry ingredients. Pour in the blended onion mixture and knead 2–3 minutes until firm and elastic (not sticky).
2️⃣ Viral shaping method
Divide dough into 6 pieces → roll into balls → place between parchment → roll VERY thin (⅛–¼ inch).
3️⃣ Roll & bake
Roll each piece up inside the parchment (burrito-style).
Bake at 350°F for 30–35 minutes.
4️⃣ Optional but elite crisping step 🔥
Unwrap, sear in a hot cast-iron skillet with a little oil + splash of lemon juice until golden.
Optional: return to oven for 10 more minutes.
🥙 Serve with
Warm pita, roasted peppers, cucumber, pickled onions & fresh parsley.
