Vegan Skillet Potato Wrap With Pesto And Smoked Tofu #easyvegan #lunch #shorts
Vegan skillet potato wrap with pesto and smoked tofu: a golden, crispy potato base wrapped around creamy avocado, fresh spinach, tomato and basil pesto.
This easy vegan lunch comes together in about 20 minutes in one nonstick frying pan. Thin potato slices cook into a crisp, overlapping layer, then get filled with vegan basil pesto, sliced avocado, baby spinach, tomato and smoky tofu. A drizzle of balsamic glaze finishes every bite with a bright, tangy touch.
Perfect for a generous lunch for one when you want a comforting potato wrap without using a tortilla. The skillet potato wrap is crisp around the edges, tender in the middle and packed with simple plant-based ingredients.
